Joe Rickerby 1d2e5d5d8f Rename DockerContainer -> OCIContainer, and a few other things 
OCIContainer.container_engine -> OCIContainer.engine
OCIContainer.docker_image -> OCIContainer.image

Variables that refer to 'docker_images' have been renamed to
'container_images'

Joe Rickerby 6a371aca73 Refactor the tests to use --run-docker and --run-podman 
Simplified test setup using a parameterised fixture. The VFS test
is now just a single test that handles its own clean up.

The trick is "{src_path}/.".

Joe Rickerby 91fae8268e Add prog arguments to ArgumentParser to prevent the wrong inferred name 
when calling like 'python -m cibuildwheel', we get errors like

usage: __main__.py [-h] [--platform {auto,linux,macos,windows}] [--archs ARCHS] [--output-dir OUTPUT_DIR] [--config-file CONFIG_FILE]
                   [--print-build-identifiers] [--allow-empty] [--prerelease-pythons]
                   [package_dir]
__main__.py: error: unrecognized arguments: --sad

With this change, we get error outputs like:

usage: cibuildwheel [-h] [--platform {auto,linux,macos,windows}] [--archs ARCHS] [--output-dir OUTPUT_DIR] [--config-file CONFIG_FILE]

This fails our CI occasionally, but we don't really care about the
occasional file escaping deletion - this is more about hygene than
anything else, so ignore errors on this step.
